Slow Cooker Pumpkin Butter

4 cups pumpkin
1 1/4 cup honey
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg

Mix together pumpkin, honey and vanilla in the slow cooker. Cover and cook on low for 7 hours. Add the cinnamon, ginger and nutmeg. Crack the lid and let the steam escape if you want a thicker consistency. Cool and store in jars.

Mmmm… we made a batch of slow cooker pumpkin butter too for #pumpkinweek – I’ve never made it before but it is SO good on fresh baked biscuits! My son thinks it would make a good “frosting” for a pumpkin loaf or cake too. 🙂

Do you use 4 cups puree or 4 cups fresh cubed pumpkin? I must try this!
