Caramel Swirl Hunks and SRC
I really enjoy when I am assigned a blog for Secret Recipe Club. When I get the e-mail each month I get giddy when I find out who I have. I then go and stalk them, I mean really stalk them. It is like opening a present on Christmas. You are not sure what you are going to find, but you are going to love it!
This month I got Lifes Simple Measures. This blog has been around for a long time. I kept seeing it quite a bit in the rotation. It is a quaint little blog about a twenty something professional. Who used to play softball in college. Family is also important to her as well as her two dogs Graham and Tilly. She got her passion for baking in college and never looked back.
The Caramel Swirl Hunks really caught my attention. Maybe because one of the ingredients is that Dulce de leche made in the crockpot. I made an extra from the brownies I made a few weeks ago.
Caramel Swirl Hunks
2 c. unsalted butter, melted
3 c. firmly packed light brown sugar
1/3 c. sugar
4 large eggs
1 tsp. vanilla extract
1 c. old fashioned oats
4 c. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. semisweet chocolate chips
1 (14 oz.) can dulce de leche
Heat oven to 350 degrees.
Generously spray a 13x9-inch pan with nonstick cooking spray; set aside.
In a large bowl, cream together the melted butter, light brown sugar, and sugar.
Add eggs, vanilla extract, and oats, and blend well. Fold in flour, baking powder, baking soda, and salt.
Gently fold in chocolate chips.
Spread batter into prepared pan. Top batter with spoonfuls of dulce de lecheand using the end of a utensil, swirl the dulce de leche into the batter.
Bake 38 minutes or until slightly brown around the edges but center is still wobbly. Reduce oven temperature to 325F. Bake an additional 10 to 15 minutes or until center is set.
Peace be with you,
