Watermelon and Limoncello Cocktail

078I am trying really hard to get into the school routine. Monkey Girl has been off all summer and it has been great!

For me Labor Day signals the end of summer. It seemed like I blinked and it was over.

A couple of weeks ago I made this drink and really enjoyed it.

Monkey Girl is the one who introduced me to agave. She was sick and had a sore throat. While we were in Trader Joe’s, they had some samples of tea. She sweetened hers with the agave and said it made her throat feel better. So I purchased the tea and the agave.

To be honest, I was thinking of a natural sweetener for this drink.  I didn’t have honey and that was my first choice. The agave was in the cabinet and tried it.  I am glad I used the agave though. If you don’t have agave nectar or don’t want to purchase it just for this recipe, you could  replace it with a tablespoon or two of honey or Karo syrup.

Watermelon and Limoncello Coctail

Ingredients:

8 cups seedless watermelon

1/2 cup lemon juice

3 tablespoons Agave Nectar

1/2 cup Limoncello

Directions:

Working in batches purée in a blender watermelon and lemon juice and Agave. Add more agave if needed.

Transfer to a pitcher and add limoncello if desired. Cover and chill until ready to serve.

    Because agave seems to be a little thinner, I love to use it in drinks! I have a watermelon in the garden that may end up partially in this recipe.
