Leftover Turkey and Sausage Gumbo
Ingredients:
1/2 cup Vegetable oil
1/2 cup all purpose flour
1 medium bell pepper (I used green)
3 stalks of celery
1 medium onion
2 quarts homemade turkey stock
3 garlic cloves
1 1/2 teaspoons thyme
1 bay leaf
3 tablespoons creole seasoning
4 cups leftover turkey meat
2 lbs Andouille or kielbasa type sausage
2 cups cooked white rice
Directions:
Preheat your oven for 350 degrees. Combine the oil and flour in a large dutch oven. Put the lid on and set it in the oven for 1 1/2 hours. Don't peek, don't open the lid, just leave it. At this point you should have a chocolate brown roux. Meanwhile chop up your pepper, celery and onion. Add that to the pot. Mix it around until it starts to brown, about 5 minutes. Add your stock, garlic, thyme bay and creole seasonings. Bring back to a boil. Simmer for 30 minutes. Add the turkey and the sausage and simmer for another 30 minutes. Serve with hot rice.
