Tomato Salad

Summer time is winding down.
I am getting the last of my tomatoes and my cucumbers are long gone.
I have stacks of pickles sitting on my shelf waiting to be put in a basket during the Advent season.
It is fun to give these as gifts and see peoples faces.
For now, I will try to enjoy my harvest with these wonderful and ripe heirloom tomatoes.
This dish is so good and so easy to make.
Sometimes the simple things are the best.

Tomato Salad

Ingredients:

1 pound of tomatoes

2 tablespoons sea salt

1 tablespoon pepper

3 tablespoons basil

2 tablespoons red wine or balsamic vinegar

1/4 cup extra virgin olive oil

1 clove garlic minced

Directions:

Slice tomatoes in half. Season with salt and pepper. Make a dressing of basil, vinegar, oil and garlic. Drizzle with dressing to coat. Garnish with basil leaves.

    What a lovely tomato salad. I can totally picture this as a side with my favorite grilled chicken.
