Holy Guacamole

I used to be a guacamole hater.
There I have said it!
In my defense the only guacamole I ever tasted was from Taco Bell.
To say it was gross was an understatement.
Then, a friend gave me this recipe.
It was love at first bite.
This has fresh ingredients.
That makes a very big difference.
From now on, this is my go to recipe.
Hopefully it will be yours also.

Holy Guacamole

2 medium avocados
1 Roma tomato
1 small onion
1 small lime
1/2 jalapeno pepper
1 clove garlic
Salt to taste

Peel and dice the onion, garlic and tomato.

Dice the avocados.
1/2 the jalapeno. I was worried it would have to much heat! I regret I should have used the whole one. That is what I get throwing it away.
Combine all the ingredients in bowl.
Add the juice of the lime.
Enjoy with tortilla chips and an ice cold beer.

Peace be with you,

I love a good chunky one. This looks fantastic. Glad you were able to get beyond Taco Bell’s! 🙂

Tip: Remove the seeds & ribs from the jalapeno if you want the flavor without the heat.
